So I survived the holidays,  I’m not sure if it’s only me, but the holidays beat me up each year – it’s true I am on a stress  level  that’s  not enjoyable.  The pressure starts around Halloween and lasts through New Year’s Day

Lately juggling a job, two school schedules and the house has been fulfilling; LOL, said me never!

Our summer was busy…we all had additional responsibilities. Without getting into details, I can hopefully say that is behind me. Luckily and so deserving, we were able to manage a fun night at the beach! YAY!

A two-week Recap!
A couple of weeks ago, our new computer arrived; we lost everything on the old computer, and I was slumming, with a very tiny but durable netbook  Thank goodness for my external hard drive, which I always backed up everything, and was able to locate and use what I needed.  That being said, after the husband hooked it up, then he gave his opinion about Windows 8, I transferred all my pictures and documents to the new computer, as well as teach myself the new system. I can say windows 8, “Rocks”! In between all of this, I cooked for the week, had a wonderful Chili dinner on Super Bowl Sunday, went to work and created a special surprise Valentine’s gift for my husband. The one thing I did not do was blog! Yikes, I feel awful …I really do!
I missed so many things in the past two weeks!

 

Our Super Bowl feast was Chili in a Crock-pot! We did not have a big gathering this year for Super bowl Sunday. Sometimes that’s just what we need; quiet family time.

Two weeks ago  I was all consumed with creating Valentine’s gift for my Hubby; there was a lot of editing involved.  He loved it,  I published my book of poems, you can check it out on the link below:

So in between getting the kids to school, going to work; we were warned about a potential snow storm approaching.  On Thursday night I did my usual “Saturday” weekly shopping. We just added a couple of extras, just in case they were right about the storm.  The supermarket was a mad house at 6 o’clock in the evening,  milk was slim pickings, and Italian style bread loaves were gone. I mentioned this to my mom when I spoke to her that night and to my surprise, my dad dropped off 4 loaves of bread on Friday morning.
When I have a lot of bread, I freeze the bread. I stick them in freezer bags; if we want bread with our dinner, I wrap it in aluminum foil (frozen) then pop it in the oven while everything else is heating through.   At 350, 10 to 15 minutes,  at 375 even less.  To test it, with a pot holder; try not to burn yourself just press on the bread.  If you like it crunchy don’t use the foil. But do watch it closely, it won’t take long in a hot oven.
On Friday the day of the snow storm school did not close early, but all after-school activities were canceled, as well as the basketball games. I did leave work early to pick up the kids from school and boy was I glad I did, all day it seemed it was raining rather than snowing, but when I got on the road it was slushy, and by the time I reached my neighborhood, a 15 minute ride, there was snow on the ground. Once I got the kids, I wanted to get gas but the gas station was closed, so I just headed straight home. Nick came home early …and ahh we were all home and ready to enjoy a snowstorm.
We had soup (Ramen Noodles soup) and tuna fish sandwiches. (Imagine!)  Nick took care of dinner…that is what they wanted….of course, it was Friday and the kids reminded us that on Friday nights our tradition is to eat in the living room and watch a movie. We watched  Ferris Bueller’s Day Off!!!!

Life moves fast. If you don’t stop and look around once in a while, you could miss it. 
Thankfully, we did not lose electricity, but we did get over 3 feet of snow…..the kids were dying to go outside the next day; but before they went outside, I made breakfast; Bulls Eye Eggs, so buttery, so yummy.

 

 

 

My sister calls them Rocky Mountain Toast.
Cut out a circle in the bread, in a hot skillet add butter, toast your bread, when both sides are toasted add more butter and crack an egg on the bread; the egg will settle in the hole, at this point  you can season with salt and pepper, flip and cook the egg to your desire.We like it over easy. 
On my dish I added a spoonful of eggplant appetizer (….almost very Moonstruck-like; in Moonstruck Olympia Dukakis was frying up roasted red pepper with the Bulls Eye Egg…I think it’s when Loretta (Cher) has a love bite on her neck and Rose (Olympia) says:
Rose Castorini: You… you got a love bite on your neck. He’s coming back this morning, what’s the matter with you? You’re life’s going down the toilet! Cover up that damn thing! Come on; put some make-up on it! 
I didn’t have any roasted red peppers, so I used the eggplant appetizer! We each had one egg and one slice of buttery toast.  Yum!
Boy did we get a lot of snow….for Long Island NY …it’s a lot of snow!  See where James and Teddy are standing they are at the end of our driveway; 4 pm and our block was not plowed yet. 

 

 

By Tuesday, we were back to normal, after a 2-hour school opening delay, the kids were in school, I was at work and now we were planning for Valentine’s Day!

 

On Valentine’s Day we ate at home, I made pork chops and applesauce, on the side we had baked sweet potatoes, green salad with homemade oil and vinegar dressing. I ate that entire bowl of Sweethearts in a week, and look at the lovely roses Honey gave me!
Today I cooked for the week, I will write about it soon…. It is almost 8 pm on Sunday night. Everyone is waiting for Once Upon A Time to start, they want  me to come and join them;  I smell chocolate chip cookies –so it’s time for a cup of tea, a cookie and sit with my family to watch a great show, but before I go, I leave you with:
